Salmon Croquettes

A delicious vegan version of Salmon Croquettes made with hearts of palm, served with a tangy tartar sauce. This meal is reminiscent of the traditional recipe my granny used to make, and it's packed with flavors from fresh veggies and spices.

What you need

tsp red wine vinegar
tbsp oil

tsp cajun seasoning

tbsp green bell pepper

tsp kosher salt

cup mayonnaise

tsp black pepper

tsp garlic powder

tbsp red bell pepper

tbsp sugar

cup green onion

tsp dried dill weed
cup dry breadcrumbs

cup vegan mayonnaise
tbsp dill pickle relish

can palm hearts

tbsp hot sauce

tsp dijon mustard
Instructions
1: In a large mixing bowl, combine the hearts of palm, vegan mayo, lemon juice, Dijon, green onions, red and green bell peppers, garlic powder, Kosher salt, and black pepper. 2: Add the flax egg and breadcrumbs to the mixture and combine well. 3: Form the mixture into patties or croquettes. 4: Heat the oil in a skillet over medium heat and cook the croquettes until golden brown on both sides. 5: For the tartar sauce, mix together mayonnaise, dill relish, finely diced red onion, red wine vinegar, Cajun seasoning, black pepper, sugar, dill weed seasoning, and Red Hot hot sauce in a separate bowl. 6: Serve the croquettes with the tartar sauce on the side.View original recipe
