Delicious stuffed mushrooms filled with a walnut and mushroom meat mixture, topped with vegan cheese. This plant-based recipe combines soaked walnuts, baby Bella mushrooms, and a variety of seasonings, all baked to perfection.

1: Soak walnuts overnight. 2: Blend soaked walnuts, baby Bella mushrooms, yellow onion, red bell pepper, green bell pepper, sun dried tomatoes, and minced garlic in a blender or food processor. 3: Sauté the mixture in oil and add the marinade ingredients (oil from sun-dried tomatoes, coconut aminos, garlic powder, onion powder, smoked paprika, and vegetable broth). Cook for about 7-10 minutes. 4: Transfer to a baking pan and bake at 400F for 20 minutes, mixing halfway through. 5: Pull the stems off the baby Bella mushrooms. 6: Fill each mushroom with the walnut meat mixture and top with vegan cheese. 7: Bake the stuffed mushrooms at 350F for 20 minutes.View original recipe
