What you need

tbsp avocado oil

cup spring water

tsp oregano

tbsp tomato paste

tsp coriander

tsp maple syrup

fl oz lime juice

tsp cumin

tbsp tapioca starch

tsp salt

tbsp adobo sauce

clove garlic
Instructions
1: Press and drain the tofu, then crumble it into a bowl. 2: In a frying pan, heat the avocado oil over medium heat. 3: Add the crumbled tofu and sprinkle with tapioca starch and salt. Cook until golden. 4: Add chopped red onion and minced garlic, frying until softened. 5: Prepare the sauce by blending the chipotle peppers, adobo sauce, lime juice, oregano, salt, coriander, cumin, maple syrup, tomato paste, and spring water until smooth. 6: Mix the sauce into the tofu mixture and cook for another few minutes. 7: Serve the mixture in corn tortillas and top with guacamole.View original recipe
