Instructions
1: Rinse the wild rice and prepare all vegetables. 2: In a pot, combine wild rice, red onion, bell peppers, black beans, minced garlic, vegetable broth, and seasonings. Cook until rice is tender. 3: In a skillet, sauté collard greens, yellow onion, and shitake mushrooms in vegetable broth with minced garlic and seasonings until cooked. 4: In a bowl, mix wet ingredients for cornbread. In another bowl, combine dry ingredients. 5: Combine wet and dry ingredients for cornbread and stir until blended. 6: Pour the cornbread batter into a baking dish and bake at 350F for 30 minutes.View original recipe
