This Vegan French Toast Breakfast Sandwich is super simple to make and might be the best sandwich to date! It's made with vegan bread, chickpea flour egg mixture, Impossible sausage, and flavored with cinnamon and vanilla extract, topped with powdered sugar and maple syrup.

What you need

tbsp olive oil
fl oz maple syrup

tsp black pepper

tsp vanilla extract

cup chickpea flour

tsp cinnamon

cup powdered sugar

fl oz spring water
tsp salt

tsp turmeric powder

bunch spinach

cup non-dairy milk
Instructions
1: Whisk together chickpea flour, spring water, cinnamon, vanilla extract, and salt to make the batter. 2: Dip the vegan bread slices into the batter and coat them well. 3: Heat olive oil and vegan butter in a pan over medium heat. 4: Cook the coated bread slices until golden brown on both sides. 5: In another pan, prepare the chickpea egg by mixing chickpea flour, spring water, turmeric, salt, black pepper, diced red onion, diced red bell pepper, and finely chopped spinach. 6: Cook the chickpea egg mixture until firm and set aside. 7: Assemble the sandwich by layering the chickpea egg and Impossible sausage between the French toast slices. 8: Serve with powdered sugar and maple syrup on top.View original recipe
