These mini sofritas tacos made with tofu, avocado oil, and an array of spices, topped with guacamole and served in corn tortillas are absolutely amazing!

What you need

tbsp tapioca starch

tbsp adobo sauce

tsp oregano

tsp salt

cup spring water

tsp cumin

tbsp avocado oil

tsp maple syrup

tsp coriander

tbsp tomato paste

clove garlic
Instructions
1: Press and drain the tofu, then crumble it into a bowl. 2: In a pan, heat the avocado oil over medium heat. 3: Add the crumbled tofu, salt, onions, and garlic, and sauté until slightly golden. 4: Mix the tapioca starch with the tofu and stir well. 5: In a blender, combine the chipotle peppers, adobo sauce, lime juice, oregano, salt, coriander, cumin, maple syrup, tomato paste, and spring water; blend until smooth. 6: Pour the sauce over the tofu mixture and cook for a few more minutes. 7: Serve the mixture in corn tortillas and top with guacamole.View original recipe
