Instructions
1: Preheat oven to 400°F. 2: Peel and slice the sweet potato thinly. 3: Toss sweet potato slices with avocado oil, smoked paprika, garlic powder, and salt. 4: Spread sweet potato slices on a baking sheet and bake for 20 minutes. 5: Meanwhile, in a skillet, heat avocado oil and add green bell pepper and red onion until soft. 6: Stir in adobo sauce, minced garlic, chili powder, ground cumin, black beans, vegetable broth, fresh cilantro, lime juice, and kosher salt.
