Spring Rolls with Sweet Chilli Sauce

Delicious airfried Spring Rolls made with a mix of cabbage, carrots, shitake mushrooms, green onions, and a variety of seasonings, served with homemade sweet chilli sauce. Perfectly crispy, these rolls are a great snack or light meal.
1: Chop the cabbage and carrots, and slice the green onions.
2: In a bowl, mix the cabbage, carrot, shitake mushrooms, green onions, sea salt, and black pepper.
3: Add avocado oil, Sriracha, soy sauce, mushroom powder, and sesame oil to the bowl and mix well.
4: Take the vegan egg roll wraps and fill them with the mixture, rolling them tightly.
5: Spray the air fryer basket with avocado oil spray.
6: Place the spring rolls in the air fryer and set it to 400°F.
7: Air fry for 12 minutes, flipping halfway through.
8: For the sweet chilli sauce, combine rice vinegar, spring water, red chili flakes, coconut sugar, sea salt, tapioca starch, and grated ginger in a saucepan. Cook until thickened.
9: Serve the spring rolls hot with sweet chilli sauce.
