1: Rinse the lentils and quinoa thoroughly under cold water. 2: In a pot, combine lentils, carrots, thyme, bay leaves, onion, garlic, and vegetable broth. 3: Bring to a boil, then reduce heat to a simmer. 4: Add quinoa and other seasonings (Himalayan salt and black pepper). 5: Cover and let it cook for about 20-25 minutes, or until lentils and quinoa are tender. 6: Fluff with a fork, remove bay leaves, and serve.View original recipe
