Instructions
1: Peel and trim the ends of the medium carrots. 2: In a pan, mix the marinade ingredients: low sodium vegetable broth, apple cider vinegar, soy sauce, maple syrup, garlic powder, smoked paprika, and Liquid Smoke. 3: Marinate the carrots for 30 minutes, covered in foil. 4: Preheat the oven to 425°F. 5: Roast the marinated carrots in the oven for 30 minutes, covered. 6: In another pan, sauté the chopped onion and minced garlic until the onions are translucent. 7: Add the rest of the vegan Coney sauce ingredients: cooked brown lentils, tomato sauce, yellow mustard, chili powder, apple cider vinegar, cumin, cayenne pepper, vegan Worcestershire sauce, garlic powder, onion powder, and crushed red chili flakes. 8: Mix the ingredients and cook until the sauce thickens slightly.View original recipe
