1: Roast 1 large sweet potato in the microwave for 10 minutes. 2: In a bowl, combine the roasted sweet potato, 1 1/3 cup of whole wheat flour, 2 tablespoons of nutritional yeast, and 1/2 teaspoon of salt to form a dough. 3: Adjust the dough with additional flour if needed. 4: Roll the dough into small pieces and shape into gnocchi. 5: Cook the gnocchi in boiling water until they float. 6: In a separate pan, heat 1 tablespoon of avocado oil and add 2 teaspoons of minced garlic. 7: Pour in 1 can of tomato sauce and 1/2 cup of vegan half & half or coconut milk to make the sauce. 8: Stir in 2 tablespoons of vegan parmesan cheese, and season with salt and pepper to taste. 9: Serve the gnocchi with the sauce.
