1: In a large bowl, combine shredded carrots, cabbage, green onions, sliced shitake mushrooms, minced ginger, minced garlic, sesame oil, soy sauce, and seasonings. 2: Mix well until all ingredients are combined. 3: Take a dumpling wrapper and place a spoonful of filling in the center. 4: Wet the edges of the wrapper with water and fold it in half, sealing it tightly. 5: Repeat until all wrappers are filled. 6: Heat a pan over medium heat and add a bit of oil. 7: Place potstickers in the pan, cooking until the bottom is golden brown. 8: Add a small amount of water to the pan, cover, and steam for about 5 minutes. 9: Remove the lid and allow excess water to evaporate. 10: Serve with the prepared sauce.
