A delicious vegan version of Salmon Croquettes made with hearts of palm, served with a tangy tartar sauce. This meal is reminiscent of the traditional recipe my granny used to make, and it's packed with flavors from fresh veggies and spices.

1: In a large mixing bowl, combine the hearts of palm, vegan mayo, lemon juice, Dijon, green onions, red and green bell peppers, garlic powder, Kosher salt, and black pepper. 2: Add the flax egg and breadcrumbs to the mixture and combine well. 3: Form the mixture into patties or croquettes. 4: Heat the oil in a skillet over medium heat and cook the croquettes until golden brown on both sides. 5: For the tartar sauce, mix together mayonnaise, dill relish, finely diced red onion, red wine vinegar, Cajun seasoning, black pepper, sugar, dill weed seasoning, and Red Hot hot sauce in a separate bowl. 6: Serve the croquettes with the tartar sauce on the side.
