1: Pulled apart the Maitake Mushrooms. 2: Dice the red onion, red bell pepper, and yellow bell pepper. 3: Mince the garlic. 4: In a pan, heat avocado oil over medium heat. 5: Add the Maitake mushrooms and sauté for a few minutes. 6: Add the diced vegetables and minced garlic to the pan. 7: Season with season all, garlic & herb seasoning, onion powder, cayenne pepper, and thyme, and mix well. 8: Remove from heat and add BBQ sauce, mixing until everything is coated. 9: Warm the vegan pita bread in a pan with butter or oil on both sides. 10: Fill the pita with the BBQ mushroom mixture and top with lettuce, tomatoes, and red onions. 11: Drizzle with extra BBQ sauce before serving.
