1: Press and drain the tofu, then crumble it into a bowl. 2: In a pan, heat the avocado oil over medium heat. 3: Add the crumbled tofu, salt, onions, and garlic, and sauté until slightly golden. 4: Mix the tapioca starch with the tofu and stir well. 5: In a blender, combine the chipotle peppers, adobo sauce, lime juice, oregano, salt, coriander, cumin, maple syrup, tomato paste, and spring water; blend until smooth. 6: Pour the sauce over the tofu mixture and cook for a few more minutes. 7: Serve the mixture in corn tortillas and top with guacamole.
